ET 官方網站訂得到 ET673，這班機只開星期日、三、五。

Why would you think so?
In my impression they mostly fly through eastern Taiwan, while CX/NH/JL usually go along the busier west coast.
HKG-Japan/Korea flights almost always fly through Taiwan instead of PRC airspace.
