The reason why Japan has more classes of carriers was mainly because they
were converted from various different platforms. If we look at the carriers the
janese managed to complete during the war, only the Taiho and Unryu classes
were built as carriers from keel up. Shoho, Zhiho and Ryuho were converted
from submarine tenders, Chitose and Chiyoda from seaplane tenders, Junyo
and Hiyo from oceanliners, and the Shinano from the Yamato-class battleship.
You can see that the Japanese were pushing hard to get as much carriers into
their fleet as possible, but the resource is seemly not there for mass production.
The Taiho is an excellent design, but takes too much resources for Japan to
build in any number. they only manage to attempt mass production on the Unryu
class, which, in any case, as a smaller and less capable, though good, ship.

On the other hand, the US could concentrate their effort to build the Essex,
Independence and Casablanca class en masse because their industry has the
resource to do so. To be fair, the Independence and Casablanca are converts,
but they are based on platforms (Cleveland-class light cruiser and A4-class
cargo ship respectively) which are readily available, which helped production.
The US rightfully concentrated on building the Essex to avoid distraction, but
they did have another class of carriers being built during the war, the Midway
class. The USS Midway (CVB-41) was in fact commissioned very shortly after
Japan surrendered. Had the war continued beyond 1945, the Midway class
could well saw some level of service in the Operation Olympic, the anticipated
invasion of Japan.
